Another quiet day around the cabin. Jim went and got a few more groceries for me mid-day. We will have to make another grocery run on Tuesday once we figure out what the sons want to eat.
The Urgent Care Clinic called today to make sure we had gotten our negative COVID test results on-line. They did a nice job treating us yesterday and I appreciated their phone call today. They had told us they wouldn’t call if it was negative.
I have spaghetti and meat balls, French bread and peach cobbler ready for dinner tonight. I cooked a spaghetti squash for those of us that don’t eat flour and will fix some regular spaghetti noodles too. Thomas and his companion are resting for a bit. They had to get up at 3:00 this morning to catch their early flight and needed a nap. When they get up and come back to our cabin we will have dinner.
We walked down to the library to return the four books I checked out last week. I finished the last one this morning. I also mailed some post cards to the grandkids. Hoping they will get them before we get home Friday.
I made peanut butter cookies earlier today. Not sure they turned out ok. Jim said they were a little dense. I used a hand mixer instead of my big Kitchen Aide so not sure they got mixed as well as they should have been. They are being eaten so guess they aren’t too bad.
It was so good to see Jim’s sons today. They got here around 3:30. We finally got to meet Thomas’s girlfriend. We had met her over Zoom but that just isn’t the same as hugging her in person.
I got a pass for Bear Lake for tomorrow morning. We can enter between 9:00 – 11:00. Not sure where we are going tomorrow but the Bear Lake Pass gives us the most options. Somedays I can’t get a Bear Lake pass for that time – I got lucky today.
Need to decide what to fix for breakfast tomorrow. I brought the waffle iron with me so will probably fix those tomorrow. I also have some good Fanestil bacon. Need to talk to the sons and find out what they like to eat and then tomorrow make some menus and go to the grocery store.
Tomorrow night I have the stuff to make a Ham and Corn Chowder. I will put it in the crock pot before we take out in the morning so it will be ready whenever we are ready for it tomorrow night.
Got a note from my handyman tonight. He has worked the last two days fixing a part of the foundation on the rental house. He needs to get one more block and that project can be crossed off the list. The only other thing on my list for that house is cleaning up the burn pile. Once that gets done we aren’t doing anything else except repairs that come up. Maybe one of these days I will get to make the full rent and not spend it on fixing things. I got that house six months ago. I kinda missed my deadline and went way over budget. Not sure I will invest in another property. Learned that lesson!
I knitted three wash cloths today. I’ve made eight since I have been here and I ‘m sure I will make lots more this week as I am out of books to read. Knitting is easier than reading when we have guests. I have plenty of yarn so don’t think I will run out of it.
We got some light sprinkles today. It threatened rain most of the day and was cooler today than it has been. It is to be mostly sunny Monday and Tuesday and then rain chances come back into the forecast for Wednesday and Thursday. Seems like up here rain can pop up any time but it usually doesn’t last very long. We did hear some thunder today – I love to hear it echo over the mountains.
Looking forward to getting back on Trail Ridge Road tomorrow and doing some hiking. I sat too much today and need to get out and move my body more.
Grateful the sons had safe travels today, grateful our COVID tests were negative, and grateful one more thing got crossed off the rental house to-do list.
