Last night Jim and I took a long hike around campus. We walked to the stables and then down to the cabin Tom and Sandy had last year and back around the administration and laundry buildings. We both needed to move our bodies and process some things.
This morning we got up early and went to the Urgent Care Clinic to get our COVID tests. The receptionist, nurse and NP were all fun to be around. The registration process seemed to take a long time and we had to wait about 30 minutes for our turn. All in all it took almost one and one half hours. We should get results later tonight or early tomorrow morning.
We then went to the grocery store and picked up the things I needed to make dinner for tomorrow night and Monday night. We will have to go back to the grocery store one more time once the sons arrive and we know what they want to eat the rest of the week.
Came back to our cabin and put the groceries away. We had a bit of lunch and then laid down to take a nap. We had just gotten asleep when Jim’s son called. Jim talked to him for a while and I tried to go back to sleep but wasn’t able to.
This afternoon I have been knitting a bit and reading. Jim walked down to the laundry and got fresh sheets for our bed. I boiled some eggs so I can make some ham salad. That might be what we have for dinner. I have gotten lazy and have quit planning what we are going to eat. With company coming tomorrow I will need to get back on top of that.
We had a brief thundershower this afternoon. Even got a bit of hail with it. Jim was down at the laundry when it hit so he stayed inside and found someone to visit with. That never seems hard for him to do. I love the smell in the mountains when it rains.
Once it clears up we will go take another long walk. It does me good to get out and stretch my legs after sitting for most of a day. I’ve been pleased that I can walk at least four miles without having to gasp for air or getting tired. Maybe I can keep that up when we get home.
I FaceTime with Ellexia for a little while this afternoon. She starts school on Thursday. She is both excited and a bit nervous about starting sixth grade. The middle school building must look mighty big to a sixth grader. They let the sixth graders start a day early so they can explore the building when it isn’t so crowded. Tagen starts school Friday. Hard to believe he is a sophomore.
Tomorrow morning we were going to go to the Denver Airport to pick up the sons. Just found out they have decided to rent a car instead. That will make things much easier for all of us and will solve our problem for next Friday when we were going to try to load three people and their luggage in our already full car to go home.
I am fixing spaghetti and meat balls for dinner tomorrow night. Late morning tomorrow I will put the sauce in the crock pot so all I have to do for dinner is fix the bread, make the salad and cook the noodles. I got a spaghetti squash today that I will roast for those of us that don’t eat flour. Easy, simple dinner.
I had gotten some CO peaches last weekend and made a peach cobbler for our guests. I got some more peaches today and plan on making another cobbler sometime this week. I also got the ingredients to make a banana pudding. That should keep all in sweets for the week. I want to bake some cookies tomorrow morning. Jim is almost out of the ones I brought from KS.
Not sure how the week will unfold. I will try to get park passes each day but one never knows if that is possible. We will come up with alternative plans if I can’t get passes. Jim wants to do several long hikes with his sons. I will be happy to stay behind as I slow them down way too much. I could make a long hike but not at their pace.
It will be nice to have company with us starting tomorrow afternoon. Jim is getting so excited about his sons coming. He hasn’t seen them since December 2019.
Grateful we were able to get our COVID tests done this morning, grateful to get to visit with Ellexia for a bit, and grateful we don’t have to drive to Denver tomorrow.
