Had another good day yesterday. The weather was perfect to be outside in the afternoon. Mid 70’s, no wind and bright blue skies. It was a wonderful fall day in Oklahoma.
We went to church in the morning. After lunch we built another set of porch railing. This time it went together faster as we learned from the mistakes we made the first time. It is set in place but not nailed in place yet.
We went for a two mile walk through the neighborhood. Gertrude, my left foot, got a bit cranky so we came back to Jim’s house.
We walked across the street and up the hill to watch the harvest moon rise at 7:16. The moon was big, orange and beautiful. We stood out and watched it for about 15 minutes. I miss my open prairie views at times like this.
I fixed a ham, cheese and potato casserole using the Instant Pot for dinner. It was an experiment that turned out good. You slice the potatoes and ham and onion and cook it in the pot for only 2 minutes with some broth. Then you put it in a baking pan and add cheese and milk to the remaining broth until the cheese melts. Pour that over the ham and potatoes and broil for five minutes. I didn’t get the sauce thick enough but th flavor was wonderful.
It was warm enough for us to sit out on Jim’s back porch for an hour after dinner. The moon cast a silvery light on the trees. It finally got too cold and I had to come in. By then it was after 11:30 and was my bedtime. Jim stayed up until his normal 3:30 before he called it a day.
Today we are going to paint on the front porch and then build the third set of railings. It is to be in the low 80’s today later after being in the low 50’s this morning. I have one more week of being in Oklahoma before I have to head back home to th prairie. Time is going by quickly.
I slept well again last night – this time drug free. Nights go by quickly when one sleeps all night! I hope I continue sleeping much of the night.
Grateful I got to see the beautiful full moon rise last night, grateful my dinner experiment worked and tasted good, and grateful for the beautiful fall weather we are having.
